Mango Smoothie

I was making dinner rather late last night when Steve popped the question, “Is there anything healthy I can eat before dinner…I’m getting really hungry!”  Scanning items we have in the fridge, I didn’t think oreo peanut butter pie would qualify as healthy!  But alas, my picture memory reminded me of two succulently ripe Manila mangoes that my friend, Grace, gave us early in the week, sitting at the bottom of the fridge waiting to be consumed.  With urgency, I put on my fear-no-failure adventure attitude and gathered items I needed to make MANGO SMOOTHIE (note: I’ve never made a mango smoothie before yesterday…hubby and I do have a mango margarita recipe we love)!

What You Need: water and sugar for simple syrup, two mangoes, milk, ice cubes, blender

Make simple syrup: combine 1/2 cup water and 1/4 cup + 2 tablespoons sugar in a saucepan.  Let boil until all sugar is dissolved; do not cover with lid.

Cut mangoes up.  I love the deep yellow-ey color of this fruit.  It's very juicy when cut.

Scoop the flesh out of the two cut up sides and set aside.

In blender, put 20 pieces ice cubes, mango pieces, 1/4 cup milk, and simple syrup in jar and blend away until mix is smooth.

After his first sip, Steve said that it tasted much like the mango smoothies we so enjoyed having on the beach on our honeymoon in Boracay.  We had a great time reminiscing our days in Boracay, a place we would like to visit again someday. Maybe. After we visit Mindoro.  Or Batanes.

Anyways, enjoy your mango smoothie anytime on a hot summer, sweltering, sticky day!  And then jump in the pool and swim!  Or vice versa.

By the way, you can use the red mangoes that are widely available in supermarkets or grocery stores if you cannot find Manila mangoes.  But I would highly recommend that if and when you find yourself somewhere in the Philippines, eat mangoes, lots of it!

Another Freecycle Find – Bedroom Furniture

I wrote about our first ever freecycle find not too long ago.  We are immensely enjoying our dining room furniture set!

Early this month, we’ve snatched another good freecycle find from a kind man in Knoxville.  He was getting rid of his then-existing bedroom furniture because he was getting a new one.  It was a stroke of what I’d call provision and timing that I had called him when I did because apparently, we were first to do so.  He mentioned that three others had sent him inquiries about it when he checked his email shortly after we talked and closed the deal.

Here’s what it looks like after many many many hours of sanding (thanks to my hardworking husband as always!), priming, and painting:

You wouldn’t think that there were major gouges in one corner part of the drawer chest and the footboard.  My Hubby did a good job filling those in and making em look as good as new.  The black paint certainly gives the furniture a look of elegance.

I don’t have pictures of the pieces in place in our bedroom yet because there are a few minor details we have to tend to first but I will update this post as soon as the project’s completed.

The furniture is our first step in transforming our bedroom from a blah kinda living space to what we hope will be a more inviting, warm haven for two people to rest and relax in after long days of parenting and working.  Not a bad way to start considering we spent na-dah on it, except for paint supplies!  I hope to post our progress as we go along.

Tortang Talong (Eggplant Torta)

Eggplant is one of my favorite vegetables and Tortang Talong is one of my favorite meals of all time.  Please don’t ask me what torta exactly means.  All I know is that this meal is called tortang talong in the Philippines and it’s delicious.  No, it’s divaaaa-ayn!  If you’re one of ‘em that’s not so sure about eggplant, give this a try and let me know what you think.

First off, the ingredients:

1/4 lb. ground pork, 3 lg. eggs, 3 Chinese eggplants, salt and pepper

This meal particularly calls for Chinese eggplant, the long type of eggplant.  They are readily available in any Asian store.  I’ve never tried this recipe on the the globe eggplant type.

Now to the fun part.

First, brown the meat.

Set the browned meat aside.  Heat your grill to medium and lay eggplants on the grate.  (You may also use the stove if you don’t have a grill.  Just turn it on and lay your eggplants, one at a time or as many as can fit within the range of the flame, and grill away.  Now is not the time to step away and watch TV or do something else in the kitchen if you go this route.  The eggplants are really jealous and will need your undivided attention.  In other words, you don’t want to burn the house!)

Give it 5-7 minutes before turning over.  You want to achieve a good charring on the skin of the eggplant.

That’s my hunky babe’s hand working the first part of the cooking process.

Turn the eggplants over and grill for another 5-7 minutes.  Do the same on the other two sides.

At this point, your immediate vicinity and your whole neighborhood will start smelling like delicious grilled eggplant with a subtle charred scent to it.  I just love the smell of grilled eggplant!

When the skin is all charred and the eggplant has softened, you’re done.  At least, for the first part.

Back inside, let the eggplant cool a little.  Then peel off the skin, careful not to peel away the flesh.

Set aside.

Crack the eggs and season with salt and pepper.

Heat a skillet.  I use non-stick on this one.  Just a little easier to cook that way for me.  Add oil, about 4 tablespoons for two eggplants.  Remember, you’re cooking eggs and eggplant and they need lotsa oil.  (Hmm…eggs and eggplant.  They belong together!!)

Beat the eggs.  With a fork, gently smash the eggplant in the eggs on both sides.

Add one eggplant, or two if space permits, in pan.  Remeber the browned meat we set aside awhile ago?  Now’s it’s time to shine, baby!  Scoop out a good amount and sprinkle it over the uncooked side.

Pour a little egg mix over the meat.  This will help hold the meat together when it cooks.

Turn over and cook the other side.

At this point, heat up some rice so you won’t be waiting to eat!  (Oh, I almost always have rice in the fridge because we eat A LOT of rice.  If you don’t have any rice readily available, make sure to cook rice before you even grill the eggplants.)  Look at that gorgeous jasmine rice.  Mmmm…mmmm!

Then wed the rice with the cooked eggplant torta and let your palate feast on this wonderfulicous food!

If you want a little seasoning, you may use soy sauce.  But if you happen to have Maggi Savor Kalamansi flavor, by golly, use it to your heart’s desire.  My hubby thinks savor should go on everything.  Almost.  I don’t think it will work with pizza!

Grocery Cart Challenge – third week of June

So here’s our total grocery spending this past week:

Notice that I made two dessert items – one of which I made particularly for Stephen because of his love affair with oreos and peanut butter.  I just could not resist making this pie when I saw the recipe because I know it would make my man the happiest on the planet, at least while he’s savoring every bite of it.  The chili con queso?  Di-vaaaa-ayn!!  Again, it’s a Steve favorite!…

Making my hubby’s favorite dessert and snack is one thing I love doing but making two in one week was a little heavy on the pocketbook, especially because the items to make them were a little more on the costly side.  I may need to choose to make just one a week and not both.

I am a vegetable lovin’ kinda gal and it’s rare that I eat hotdogs and hamburgers a lot in one week.  But there were a couple things that went on this week.  First, the weather started ridiculously rising to the upper 80’s and 90’s and I generally refuse to cook on the stovetop when this happens.  So, the grill was fired up.  Also, we had been on the busy side this past week that a quick and easy meal to prep were burgers and hotdogs on the grill.  (I know, I know.  I could have chosen much healthier meals on the grill but I obviously didn’t plan this week well.)  Finally, I’ve searched high and low for good deals on fresh produce, thinking that with the summer season in full swing, there would surely be great deals.  However, produce prices are still outrageously priced.  Hence, the heavy meat-on-the-grill-week.

The Farmer’s Market cost was for just approximately one pound of spicy cajun sausage.  It was delicious.  And HOT!  But that’s not what I wanted to talk about.  See, I was expecting to also find great veggies and prices at the Farmer’s Market but they didn’t have much.  It might have been the location.  I thought their selection and prices were rather dismal – mostly potatoes and salad greens.  I wanted peppers, green beans, swiss chard, and eggplant.  Maybe it’s not harvest season for those quite yet.  Anyways…the thing I wanted to talk about was the $7 cost of four pieces of sausage that were good but not outstandingly great.  Steve and I were discussing the fact that buying meat at the farmer’s market is a great way to support the local farming industry; however, four pieces of sausage for $7 seemed steep when we could probably buy a bulk of sausage at Sam’s for roughly the same cost.  Don’t get me wrong here.  I would really love to buy all meats that are junk-free and/or free-range chickens but the cost is just too much for a tight budget.  Maybe someday when I can grow our own chickens…and pigs…and a cow.  Maybe.  Someday.   For now, I cannot, CANNOT wait until I harvest my first batch of green beans off my veggie garden in the backyard!

Happy Father’s Day, Dad!

I miss you, Dad!  I wish you are here right now to see how your apo, Paul Robert, is growing.  He has some of your feautures – eyes, cheeks, and face shape.  Not too long ago I was gazing at him and I kept saying, “Paul, you look so much like your Lolo Robert!”

One of the things I miss most about my Dad was him at the guitar.  When he gets his hand on one, he could spend a whole day playing and singing John Denver, Beatles, Jim Croce, Peter Paul and Mary, and anything rock folksy.  As the night falls and he pops open a San Miguel Beer or Gin, and he gets a little tipsy, the guitar playing gets better.  As the night deepens and he’s all out drunk, his guitar playing is even much better but his singing is terrible!  I only wish I recorded some of his singing!

My 6-month-old Bug

Today…

Sorry, I don’t have an official 6-month-old photo of him yet…but I must tell you that he is now a bouncy, full-of-life little one!  He’s slowly discovered the use of his knees and arms and in the last two weeks has really gone mobile.  He can now crawl from one side of the room to the other to get something he’s set his sights on to, never mind that he keeps flipping on his tummy to back to tummy and back again about ten times.  I think he rather enjoys that!  Ahh…tummy time has finally paid off!  It’s scary to think what he can do if we leave him all on his own.  He just might wander out of the house!  Oh, and ya, both Steve and I have been fascinated by his unusual high tolerance for pain.  His small body would hit something on his way to grab a toy he’s been eyeing and he would not even flinch.  There were more than one occassion when we’d expect him to cry because of a hit or a scrape but not even a fuss comes out of our baby’s mouth.  Mind you, when he went for his 6-month vaccination, he screamed and big tears streamed down his face.  There, he’s not so immune to pain, after all.

He’s also been pooping pretty regularly in the toilet, at least once, at most three times a day.  I don’t have any grand goals in this exercise besides teach him that poop goes in the toilet.

The last three weeks he has been sleeping through the night.  That means he’s been sleeping on a stretch of four hours, wakes up for his nighttime feeding, then settle down for another stretch of four hours before his early morning feeding to last him another two hours of sleep.  It’s amazing how much moving he does in his sleep.  Just about every time he wakes up he’s on his tummy and has moved from his original position to someplace else in his crib.

I am a new person because of his new sleeping pattern.  Where before, I’d be lucky to have a shut-eye of two hours, now I’m finding myself in dreamland again.

His first tooth is out!!  It sorta sprang out overnight.  And he was not unusually irritable.  There’s another one coming out right next to the first one.  I actually can feel it just above the surface of his gum when I stick my finger in there to feel it.  As you can imagine, he is putting anything and everything in his mouth…and with his mobility these days, he sure is keeping his momma on her toes!

He is such a joy to watch as he grows and discovers the world around him…and I am ever so grateful that he is with us!

Whoaa!!  Was that fast or what??!!  My man knew what, or more appropriately, who he wanted. :)

Steve flew back to the Philippines for two weeks at the end of August and we had spent every single day together, even for just an hour.  I was still going to school at the time but my mind was elsewhere.  Oh, and I felt like I was walking two feet above the ground all the time!  I flunked my Algebra at the end of this term.  For the second time.  So you can’t entirely fault our two-week dating for that. harharhar!!

I would add my side of the emails too, if I could, but unfortunately, Steve’s hotmail account, which had all my emails, was shut down by hotmail for some reason and it was unretrievable.  He did not have any back-up of them.  I sobbed when I heard this!  No, not really, but I was sad.

So…how about a once-a-week email checker to an almost daily client at the internet cafe?  In Steve’s own words:

“I knew she was interested in me when she wasn’t just emailing me once a week but almost every other day.”

Yea, I’ve heard him joke about this many many times and each time I relish our sweet and tender night at Cafe by the Ruins. Oh, and I also thank the person(s) who invented the internet.

Happy 7th Anniversary, Babe!  I’ve loved every single day of our life together so far and I’m looking forward to more years…and more children.  (Did I just say more children?!!  Hmm…I must be getting better sleep at night these days!)

Palalo ay Yaman, Part 3

Last Sunday in September, a.k.a. our last Sunday at North Sub.  What a morning!  I was a basketcase…all morning I had a lump in my throat that didn’t go away.  I could not sing one sentence without stopping.  I must have used up a whole box of kleenex.  It was getting embarassing…my eyes were all puffy and no amount of make-up covered for it.  I just blamed it all on my hormones.

Somewhere in the service, Brian, Steve and my boss who is also the Worship Pastor, called us onstage to pray for us.  Literally, my whole body was shaking and the floodgates of tears opened even Noah’s ark would not have survived it.  He prayed from Psalm 20:1-5.  I heard long pauses and a quiver in his voice.  I felt Steve’s clasp on my hand get tighter and tighter.  It was a moment frozen in my mind as touching, beautiful, bittersweet, and sad all at once.  Once in a while, my baby would kick me in the gut.  He brought smiles in my heart that morning amidst my heavy feelings of sadness.

We pray that the Lord will listen when you are in trouble, and that the God of Jacob will keep you safe.  May the Lord send help from his temple and come to your rescue from Mt. Zion.  May He remember your gifts, and be pleased with what you bring.  May God do what you want most, and let all go well with you.  Then you will win victories, and we will celebrate, while raising our banners in the name of our God.  May the LORD answer all of your prayers!

That night, I reflected on the day.  Some say that leaving is easier than being left behind.  This was an exception.  I had the hardest time saying goodbye, though I know there will be visits and emails and phone calls and facebook.  The hardest part, I thought, was leaving behind our “family,” our support system, in a time when we are about to receive our newest little member of our family.  Paul has been so loved from the very beginning and we won’t even be there when he debuts into this world to meet the wonderful aunts and uncles and grannies who had been praying for him from since he was in his mommy’s womb.  But God had other plans and that night, as reluctant as I was, I surrended.  Not with a sense of resignation but rather as with the words of Matt Redman’s song, “Lord, You give and take away; Blessed be the name of the Lord.”  There was no dramatic sudden peace in me but at least I had a better sleep.  Steve and I had a good cry that night.  We both knew that new adventures await us and the overwhelming sadness we felt will pass.

Thanks, Ingmari, for letting us stay in your house while we were waiting to take off.  We love you and Rick!  Looking forward to sharing sushi with you again sometime!

Grocery Cart Challenge

I told you this thing is quite the challenge, didn’t I?  Well, this week, I went over over budget.  As a matter of fact, I’ve just about used up my budget for the month! Ahhhhh!!

The night before we went shopping, I planned all the meals for the week and completed our grocery list.  I counted 26 items!  I was so excited I bugged Steve in his sleep and told him that for certain we will either come under budget tomorrow or right at budget, assuming each item cost $1.  Wrong!

First stop was Kroger.  Wrong move.  Then Walmart.  A little bit encouraged.  THEN Sam’s!  Really disappointed.  Sigh!

Lessons learned:
1. Kroger is not the best place to go shopping.  Sure, there may be some good deals of the week but I think Walmart still has better deals even with just their store brands.  Kroger may work best when shopping their deals along with coupons and I don’t do couponing right now because we don’t get the Sunday paper.  The really useful online deals are few and far between.

2. Menu planning requires mindful planning.  I think I chose recipes this week that had at least two items on the pricey side.  Stephen reminded me that we could always eat simpler meals such as eggs and light salads.  I knew this but I was caught up in those oh-so-yummy-looking recipes I let my guard down!  I love that Steve guy and I’m glad he’s working with me on this.

3.   Sam’s still has better unit prices when it came to meat per pound.  It’s just that you have to buy 100 lbs of each item there (ok, 100 lbs is an exaggeration but I do mean a lot).  We were completely out of meat so I stocked up on chicken and pork.  Again, Steve said that I should probably plan my meat on a monthly basis and figure the cost into the weekly budget.

The good thing is we’re still within budget for the month, just not for the week.  It will be tough not to have to run to the store for something in the next few weeks but I will try my best to stick with what we have.

I don’t have a photo this week.  My plan is to monitor closely the items I use and total up the cost for posting at the end of each week.  Thankfully, we’re still eating leftovers from the meals I prepared last week.
